Dish of the Week: Dinner in bed

sweet potatoIngredients:
Sweet potato,
pine nuts,
tamarind sauce, which not only is an amazing antioxidant that fights diabetes and obesity,
relieves from sore throat, fevers, inflammation, infections,
but it’s also used to provide relief from constipation, stomach and abdominal pains.
That on top of being a cancer fighter. So, bring it on!

Papaya and apple nicely complement the meal bringing its own mix of exotic and local.

Sweet potatoes took 45 mins in the oven but the rest was about 7 to 10 mins.
