Dish of the Week: Montse’s Kitchen

Here is where you’ll find me for the next couple of hours:

Preparing the roast for tonight while I watch “Pompeii”.  Not meant to be a great film, but I will be too busy to pay attention to the plot, so good abs and arms will do.  And long haired men.

Corn fed chicken marinated with olive oil, 1lime, 1 lemon, hierbabuena, cumin seeds, garam masala, flaxeed, brazil nuts, walnuts and almonds.

Roasted sliced potatoes and courgettes,

spinach with kale and pine nuts

squash with basil, cherry tomatoes,

coconut cream for the vegetables.

And a little watermelon cut in sticks.
